The structure and properties of blanched mushrooms differ in all aspects compared to fresh mushrooms. The cutting of blanched mushrooms requires another way of orienting and slicing. DTS offer slicing machines that have been specially designed for handling this product.
Orientation and slicing
For the orientation of mushrooms, DTS uses small water flumes. The product is oriented > 98%. The slicer head consists of a single rotating blade shaft with special profiles between the blades.
The combination of the orientation flumes and the special slicer head ensures a uniform cutting thickness and perfect silhouette slice. The use of specially developed reinforced stainless steel blades results in a shatterproof or damage-free end product.
